Apple Cinnamon Baked Oatmeal

Ingredients:

*For applesauce:

• 1 apple
• 1/2 cup water
• 1 tbsp brown sugar
• cinnamon sprinkled over

For baked oatmeal:

• 1 cup quick oats
• 1/8 cup salted butter
• 1/2 cup applesauce*
• 1/8 tsp maple syrup
• 1/2 tsp vanilla
• 1 egg
• 1/2 tsp cinnamon
• 1/4 cup almond milk
• 1/2 tsp baking powder
• apple slices for topping

Recipe:

For applesauce:

1. Chop the apple into small pieces.  Combine the apple pieces, water, sugar and cinnamon in a small saucepan.
2. Cover and cook for about 15 – 20 minutes, until the apple has softened.
3. Remove from heat, and mash with a potato masher.

For baked oatmeal:

1. Preheat oven to 375 F.
2. Combine all ingredients in a bowl and mix well.
3. Transfer the mixture to a casserole dish, and line up with leftover apple slices.
4. Bake at 375 F for 30 – 35 minutes.
